Tired of making cakes with them ?( haha like that could ever happen!)
This recipe is adapted from My Mother in Laws famous squash puppies.
It comes close to hers, but hubby chose her original recipe in the taste test.
(I think he was afraid that Mom would find out if he didn't.. LOL... joking)
Enough for the teasing...So here we go
Ma Casey's Squash Puppies Printable Recipe Below
- 2-3 yellow squash
- 3/4 cup almond flour (available here Almond Flour 10 Ounces)
- 1/2 cup Parmesan cheese (available here Kraft 100% Grated Parmesan Cheese - 24oz by Kraft [Foods])
- mineral salt (available here)
- 1 egg
- THM baking blend (available here )
Cut up 2 squash discarding end pieces
Boil until tender
Drain in Colander
Mash up with potato masher
add in almond flour, parmesan cheese , mineral salt and egg blend well.
Cover and refridgerate over night
Drain off any liquid on top
Take batter out by spoonfuls and roll into balls
Roll balls into baking blend
Fry in frying pan in oil or in deep fryer ( if using frying pan turn frequently to brown evenly and prevent burning)
Drain on paper towels and serve with sauce of choice
