Taco Bites Low Carb THM S

Taco Bites

 
 

Crust

  • 3eggs
  • 1/2 tsp coconut oil
  •  1/4 cup parmesan cheese
  •  3 cups mozerella cheese
  •  pinch of mineral salt
  •  1/4 cup coconut flour
  •  1/4 cup Almond flour
  •  1 tsp xanthan gum

 filling

    • Salsa 
    • Cheddar or jack cheese (about a tsp per bite)
    • (optional taco meat, or canned, drained chicken or frozen strips)

       Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
      When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.

      Grease muffin pan and fill with about a tablespoon of  Crust mixture, making a well in the muffin cup and working it up the sides to form a little cup to put the salsa into.
      After forming the cups add filling ingredients and bake at 350 degrees for about 20 minutes.
      Let cool about 3-5 minutes and gently work a spoon around the edges and underneath the taco bite gently lifting it out when you have worked it loose. Eat and enjoy with your favorite taco toppings or freeze for later
      Add dough to muffin pan

      add salsa or taco sauce

      add cheese


      bake

      let cool


      remove gently with a spoon

      Low Carb Deep Fried Eggs THM S Trim healthy mama

       DEEP FRIED DEVILED / ANGELED EGGS


      Ingredients
      Directions
      Add the eggs to a large saucepan filled with cold water.
       Bring to a boil.
       Remove from heat and let sit in the water15 minutes or more.
       I sometimes throw Ice cubes in to help cool the eggs down after the 15 minutes.
      Peel the eggs and slice lengthwise.
       Remove the yolks to a bowl. 
      Add the mayonnaise, Dijon, lemon zest, chives, hot sauce and salt and pepper. 
      Mash the yolks together with a wooden spoon. 
      Taste and adjust seasonings, if needed. 
      Fill the egg yolk mixture into the egg whites.

      Heat oil in a deep-fryer to 350 degrees F.
      In a medium bowl, add 1/2cup pprotein powder  and ½ cup coconut flour and season with salt and pepper. In another bowl, beat the eggs, in a third bowl, add 3/4 cup baking blend an ¼ cup flax meal  
      Dip the eggs into the flour mixture, then the egg and finally into the baking blend and flax meal mixture. Gently put the eggs into the hot oil. Fry until golden brown. 
      Remove to a paper towel lined sheet tray. 
      Season with salt and pepper and garnish with parsley.

      Easy breezy Low Carb Chicken Rinds

       Preheat oven to 375 and put chicken Skins on a broiler rack in the oven for about 15 minutes.
      Ovens vary so watch the first time you make this recipe to ensure they do not burn.
      They should be crisp when you are finished.
      That is it! Easy Peasy Lemon Squeezy

      Note
      * I often use the chicken thighs cut into bite size pieces for recipes removing the skin. The mamas also recommend this in the cookbook for recipes.
      Instead of throwing away this chicken skin, save it to make your chicken rinds

      Ma Casey's Squash Puppies Low Carb THMS

      Ma Casey's Squash Puppies

      Is your garden bursting at the seams with squash?

      Tired of making cakes with them ?( haha like that could ever happen!)
      This recipe is adapted from My Mother in Laws famous squash puppies.
      It comes close to hers, but hubby chose her original recipe in the taste test.
      (I think he was afraid that Mom would find out if he didn't.. LOL... joking)
      Enough for the teasing...So here we go

      Ma Casey's Squash Puppies      Printable Recipe Below


      Cut up 2 squash discarding end pieces
      Boil until tender
      Drain in Colander
      Mash up with potato masher
      add in almond flour, parmesan cheese , mineral salt and egg blend well.
      Cover and refridgerate over night
      Drain off any liquid on top
      Take batter out by spoonfuls and roll into balls
      Roll balls into baking blend
      Fry in frying pan in oil or in deep fryer ( if using frying pan turn frequently to brown evenly and prevent burning)
      Drain on paper towels and serve with sauce of choice
      YUM!!!!
