Battered Squash low carb  THMS

Thumbs up from Hubby!!!


Ingredients

1 yellow squash sliced julienne (or French fry style)

1/2 cup egg whites  or whisked eggs

1/2 cup almond flour

(available here Wellbee's Super Fine Blanched Almond Flour / Powder 2 LB.)

1/8 cup oat fiber

(avaialable here Lifesource Foods Oat Fiber 500

Dash of mineral salt

(available here Real Salt Sea Salt - Pouch, 26-Ounce) 

1/4 cup parmesan cheese

Method

Cut squash

Dip into egg wash

Then into almond flour and oat fiber mixed together.

Add to deep fryer (about 350) for about 7 minutes or until golden brown.

Remove from deep fryer and drain on a paper towel. Sprinkle with mineral salt and Parmesan.
