Good Morning Coffee Cake

Preheat Oven to 325
Line 8x8 baking pan with parchment paper and spray with coconut oil
Whisk (or Mix with fork) 3 tablespoons sweet blend with 2 tsp cinnamon for topping
Whisk together (or Mix with fork) in a bowl protein powder. almond flour, baking blend, salt, baking soda, and baking powder.

In a separate mixing bowl mix melted butter,cream cheese, sweet blend, extracts, sour cream, eggs and stevia. Combine well.

Spread half of the mixture onto prepared parchment paper

Sprinkle with half of the topping, followed by half of the pecans an half of the chocolate chips

Spread the remaining half of the mixture 

Sprinkle with remaining  half of the topping, followed by half of the pecans an half of the chocolate chips





Ingredients

  • 1/2 cup protein powder
  • 2 1/2 cups almond flour
  • 1/2 cup thm baking blend
  • 2 tsps baking power
  • 3/4 tsp baking soda
  • dash of mineral salt (1/8-1/4tsp)
  • 1/3 cup sweet blend
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 tablespoons melted butter
  • 1/2 tsp almond extract (optional)
  • 1 tsp vanilla extract
  • 1 squirt skinny girl stevia (optional)
  • 2 ozs of cream cheese
  • 1/2 cup pecan halves
  • 1/2 cup lilys chocolate chips (or home made chocolate chips)
  • 3 tablespoons sweet blend
  • 2 tsp cinnamon

Method

  1. Preheat Oven to 325
  2. Line 8x8 baking pan with parchment paper and spray with coconut oil
  3. Whisk (or Mix with fork) 3 tablespoons sweet blend with 2 tsp cinnamon for topping
  4. Whisk together (or Mix with fork) in a bowl protein powder. almond flour, baking blend, salt, baking soda, and baking powder.
  5. In a separate mixing bowl mix melted butter,cream cheese, sweet blend, extracts, sour cream, eggs and stevia. Combine well.
  6. Add the dry ingredients gradually to the wet ingredients
  7. Spread half of the mixture onto prepared parchment paper
  8. Sprinkle with half of the topping, followed by half of the pecans an half of the chocolate chips
  9. Spread the remaining half of the mixture 
  10. Sprinkle with remaining  half of the topping, followed by half of the pecans an half of the chocolate chips
  11. Bake in oven about 35 minutes until golden brown
