Yum Quick and Easy Eggplant Parmesan
Eggplant was on sale for 99 cents at Aldis last week ... 
so for Our New Recipe this week.. we are using Eggplant ! 
 A nice satisfying Vegetarian dish
- 1 eggplant cut into rounds
- 1 jar sugarfree spaghetti sauce or make your own
- 1 cup parmesan Cheese
- 11/2 - 2 cups mozzarella cheese
- 1 can mushrooms (optional)
- Preheat oven to 350
- Add sliced eggplant to pan prepared with coconut oil spray
- Layer with sauce, Parmesan, mozzarella , mushrooms save about 1/4 cup mozzarella to top of the casserole.
 
 
 
- Cover with aluminum foil and bake for about 45 minutes
  FINISHED YUM!!!
