Not Croissant Chicken Bake



  • 4eggs
  • 1/2 tsp coconut oil
  •  1/3 cup parmesan cheese
  •  3 cups mozerella cheese
  •  pinch of mineral salt
  •  1/4 cup coconut flour
  •  1/4 cup Almond flour
  •  1 tsp xanthan gum


  • 8 oz cream cheese
  • 1 1/2 - 2 cups chicken chopped or shredded
       ( leftover rotiseirre chicken would be good and economical)
  •  1/2 cup parmesan cheese 
  • 1 tblsp chopped onion
  •  1/2 tsp garlic powder
  •  1/2 tsp onion powder
  •  1/4 tsp turmeric
  •  1tsp parsley flakes
  •  1/2 tsp paprika 

 Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.
Grease an 8x8 pan with coconut oil. And spread about 2/3 of the crust mixture out into the pan.
Top with filling.
Add remainder of the topping and spread or crumble ontop of filling.
Bake at 350 degrees for about 25- 30 minutes until golen brown.
Allow to cool 5- 7 minutes and cut into 9 serving slices.
Enjoy !
Leftovers freeze and reheat easily
