Lemon sunshine poppy cheesecake

Sharie's Lemon Sunshine CheeseCake

Lemon Sunshine Curd

Start by taking out 2 packages of cream cheese to bring to room temperature.
Next lets make the Lemon Curd, it will need to cool a little.
Melt 1 stick of butter on medium heat when butter is melted turn the heat on low,
 whisk in  6 tblsp Sweet Blend( or 6 tblsp swerve or Pyure)
whisk in  6 egg yolks
 and 1/2 cup fresh lemon juice  and
2 drops lemon essential oil (optional) and
1/4 cup lemon zest (optional)
Stir until well blended and continue stirring until it thickens 2- 3 minutes . let cool in fridge while making cheesecake


The crust


There are several crusts floating out there and some in the Trim Healthy  mama cookbook

Simple Low Carb Pie Crust

1 2/3 cups of Almond flour (or mix of 1 cup almond flour and 2/3 cup ground nuts into a meal)
Almond Flour Blanched (2lb) by Anthony's, Certified Gluten-Free
1/2 stick of butter melted ( or 3 tablespoons melted butter and 2 tablespoons coconut oil)
2 tablespoons sweet blend
Bake at 350 for 8-10 minutes. Allow to cool slightky before filling.

The Filling

2- 8 ounce packages of room temperature cream cheese
3 large eggs
7 Tablespoons of Sweet Blend ( or 6 tblsp swerve or Pyure)
I added 1 Tablespoon of Poppy Seeds to Batter  this is optional
Mix well an pour into pie prepared pie shell


Take Lemon sunshine Curd and drop by spoonfuls in various locations int the pie and swirl with a knife in design of choice
Bake at 350 degrees for 35- 45 minutes. It needs to be firm and not jiggly, when you pull it out of the oven to cool

Finished product is fantastic even for non THM eaters!!!!

  1. I am assuming this gets baked? And do you prebake the crust, then add the cheesecake mixture? Can you give baking temo and time? Thanks - this sounds wonderful! Pam

  2. Mouth watering already. I'll go and prepare my simple pastry and make my first PUMPKIN PIE in ages ! Hubby cannot tolerate dairy. :-( I use coconut cream in my p pie.
    Btw, your cheesecake looks scrumptious. Congratulations ! How do you make that lovely pattern on the top ?

    1. I drop by spoonful and go around the pie clockwise starting in the center an working my way out staggering where I add the lemon curd.Then run a butter knife through the curd an make a swirl pattern.Hope that helps
