Taco Bites Low Carb THM S

Taco Bites

 
 

Crust

  • 3eggs
  • 1/2 tsp coconut oil
  •  1/4 cup parmesan cheese
  •  3 cups mozerella cheese
  •  pinch of mineral salt
  •  1/4 cup coconut flour
  •  1/4 cup Almond flour
  •  1 tsp xanthan gum

 filling

    • Salsa 
    • Cheddar or jack cheese (about a tsp per bite)
    • (optional taco meat, or canned, drained chicken or frozen strips)

       Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
      When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.

      Grease muffin pan and fill with about a tablespoon of  Crust mixture, making a well in the muffin cup and working it up the sides to form a little cup to put the salsa into.
      After forming the cups add filling ingredients and bake at 350 degrees for about 20 minutes.
      Let cool about 3-5 minutes and gently work a spoon around the edges and underneath the taco bite gently lifting it out when you have worked it loose. Eat and enjoy with your favorite taco toppings or freeze for later
      Add dough to muffin pan

      add salsa or taco sauce

      add cheese


      bake

      let cool


      remove gently with a spoon

      Easy Cheesy Salsa Casserole

      Easy Cheesy Salsa Casserole  

       

      This is Easy and frugal  and adaptable for everyone!
      **Frugal Mamas this is for you
      Vegetarian Mamas this is for you
      Farm Fresh Tess Mamas this is for you 
      Crockpot  loving busy Mamas this is for you 
      And *Drive through Mamas this is for you
      If you are a drive thru sue you can adapt this recipe to omit the bonus nutrients and use the pre- made substitutes suggested

      Ingredients

      1 package rinsed, soaked and cooked Navy beans** (or 10 cups canned Beans*)
      2 cups sugar free Salsa (homemade** or purchased*)
      4 Light laughing Cow Cheese Wedges ** (If you have an Aldis they carry an off brand )
      Dash of Sea Salt or Mineral Salt
      Real Salt Sea Salt - Pouch, 26-Ounce  
      Squirt of Braggs Aminos (optional but nutritious)
      Liquid Aminos 16 oz. 16 Ounces  
      1/4  teaspoon Cumin Powder
      1/4 teaspoon organic turmeric  (optional but nutritious)
      Simply Organic Turmeric Root Ground Certified Organic, 2.38-Ounce Container  
      1/2 tsp collagen powder (optional but nutritious) 
       Neocell Super Powder Collagen, 7 Ounce (Packaging May Vary)

      Stir together in Crockpot on low 3-5 hours 
      or longer if you like 
      ENJOY!!!

      Cole slaw dressing FP low carb

       Cole slaw dressing FP



      I posted the recipe previously in a menu plan but forgot to make it as a post

      FP coleslaw dressing

      mix 3/4 c light mayo,

      1 1/2 Tbsp ACV

       3 tsp sweet blend

      or truvia 

      Truvia Natural Sweetener, 250 Packets, Net.wt 26.5 Oz

       1/2 tsp salt

       1/2 tsp pepper

      Mix together and stir into your bag of coleslaw mix

      Frugal Foodie Friday Big Batch Spaghetti Sauce Low Carb THMS

      Sugar Free Low Carb
      Big Batch Spaghetti Sauce
      THMS


      Add the following to a crockpot
       2- 1pound Packages of sausage
      3-1pound packages of hamburger  to crockpot 

      season with. 

      Italian seasoning Blend


      Real Salt Sea Salt - Pouch, 26-Ounce
      Or Thm mineral salt

      Garlic Powder

      Onion Powder

      Turn on high and cook for about 2 hours stirring occasionally.
      Add 1 chopped onion, 1 chopped pepper,and 3 cloves of minced garlic.


      Stir well.
      let cook about another hour .
      Drain meat in colander over bowl.


      Add meat to large stockpot or back to cleaned out crockpot.

      1 very large can tomato sauce (bulk section at costco)

       1 6 Oz can tomato paste 


      and stir well with Meat Mixture.

      Add more of the above seasonings , 

      Let cook on low 3 hours and then add to jars 
      . I freeze mine in freezer safe canning jars.

      ALL READY FOR MEALS!!!

      Thrifty help

      Here's my make ahead tip...

      One week I make up a big batch from my menu plan, that lasts us 2 weeks.
      The following week I make up one of the following as I add them to my blog I will add the links as well!
      1.Bone broth/ chicken broth / veggie broth (not all of them just one of them depending on what I have in the freezer reserved for broth)
      2. Crockpot fat free  greek yogurt
      3.Apple cider Vinegar
      4.Veggie seasoning blend to last over,the next several months or month depending on the upcoming recipes
      5. Salsa
      6.Thm friendly jelly
      7. Big Batch Spaghetti Sauce 
      Hope that gives you some ideas on prepping frugally ;)

      Kombucha Making your own Scoby

      I started with this Raw unflavored Kombucha.

       I  added regular sweet tea to it in my clean sterile gallon jar. (Previously a pickle jar) I filled it to the lower rim of the jar, leaving just an inch or so of head-space, as shown in this picture.

      I then Covered it with clean Sterile Gauze and band ( fruit flies may be able to get into it if using cheesecloth.I want Kombucha free of this added protein source.)
