Coconut Delight Low Carb THMS

Ingredients
4 eggs 
2 packages 1/3 less fat cream cheese room temperature  (or regular cream cheese) *
* You can also take the cream cheese in  package and add to a large pitcher and slowly add hot water and let it sit in the pitcher of hot water for about 10 minutes(in the package , or you will have a mess) It will be slightly messy as you take it out of the package and scrape it off the foil. but cream cheese can be messy anyway and this is the only way I know how to do this short cut.
 1 tsp vanilla extract
3/4 cup gentle sweet  (available here )
 1 cup coconut flakes 
Available here Let's Do Organic Unsweetened Coconut Shredded, Fine Shred, 8 oz

Directions
Whisk eggs and beat in cream cheese ,vanilla and sweetener
Pour into coconut oiled tarte or pie pan. Sprinkle coconut flakes on top and bake at 350 for about 20 minutes until  firm and slightly golden ( do not over cook)
Let cool 
Slice and enjoy 
I added Berry Syrup to mine You could also a a squirt of fat free ready whip or home made whip cream

Low Carb Berry Sauce THM Fp THMS


I modified my old regular sugar and cornstarch berry sauce for this one
 the original is an old standard nation wide

I also added it to my coconut Delight and cheesecake bites





4 cups Berries mixed or just Strawberries
(watch the carb count on the mixed as you add it to S Dishes) 
3 cups water 
Bring to a boil 
whisk in 1 tsp of gluccie  and simmer about 15 minutes 
It will thicken more as it cools 
That is it easy breezy syrup

Not Croissant Chicken bake THM S Low Carb

Not Croissant Chicken Bake

 

 Crust 

  • 4eggs
  • 1/2 tsp coconut oil
  •  1/3 cup parmesan cheese
  •  3 cups mozerella cheese
  •  pinch of mineral salt
  •  1/4 cup coconut flour
  •  1/4 cup Almond flour
  •  1 tsp xanthan gum

 filling

  • 8 oz cream cheese
  • 1 1/2 - 2 cups chicken chopped or shredded
       ( leftover rotiseirre chicken would be good and economical)
  •  1/2 cup parmesan cheese 
  • 1 tblsp chopped onion
  •  1/2 tsp garlic powder
  •  1/2 tsp onion powder
  •  1/4 tsp turmeric
  •  1tsp parsley flakes
  •  1/2 tsp paprika 

 Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.
Grease an 8x8 pan with coconut oil. And spread about 2/3 of the crust mixture out into the pan.
Top with filling.
Add remainder of the topping and spread or crumble ontop of filling.
Bake at 350 degrees for about 25- 30 minutes until golen brown.
Allow to cool 5- 7 minutes and cut into 9 serving slices.
Enjoy !
Leftovers freeze and reheat easily

Fried Ice Cream

Fried Ice Cream

My blogging  friend at nanas little kitchen  has a similar  recipe check it out here 


Ingredients

  • Low carb tortilla
  • Carb Smart Ice Cream
  • Sweet blend mixed with Cinnamon
  • coconut oil for frying


Add a 1/2 serving of carbsmart ice cream to low carb tortilla



fold over length wise an crosswise to form a square type shape

Fry in tsp coconut oil in frying pan on both sides


Mix sweet blend and cinnamon

remove tortilla from pan and sprinkle in cinnamon mixture

shake off excess cinnamon mixture

top with a little carb smart or 1/2 serving

chocolate fried taco turnover





THANK YOU Briana Thomas for the idea!!!
I changed up Briana's fried berry taco recipe here to suit my chocolate and cinnamon sugar craving.. All I can say is Thank you! an YUM!


Cream cheese and sweet blend


cinnamon and super sweet blend mixed together


1/2 a mosser roth or lilys chocolate square


Greek yogurt,cream cheese and sweet blend mixed and spooned onto chocolate


low carb tortilla folded in half length and width into a square


Fry In coconut oil


Sprinkle with cinnamon sweet blend mixture
