Low Carb Berry Sauce THM Fp THMS


I modified my old regular sugar and cornstarch berry sauce for this one
 the original is an old standard nation wide

I also added it to my coconut Delight and cheesecake bites





4 cups Berries mixed or just Strawberries
(watch the carb count on the mixed as you add it to S Dishes) 
3 cups water 
Bring to a boil 
whisk in 1 tsp of gluccie  and simmer about 15 minutes 
It will thicken more as it cools 
That is it easy breezy syrup

Taco Bites Low Carb THM S

Taco Bites

 
 

Crust

  • 3eggs
  • 1/2 tsp coconut oil
  •  1/4 cup parmesan cheese
  •  3 cups mozerella cheese
  •  pinch of mineral salt
  •  1/4 cup coconut flour
  •  1/4 cup Almond flour
  •  1 tsp xanthan gum

 filling

    • Salsa 
    • Cheddar or jack cheese (about a tsp per bite)
    • (optional taco meat, or canned, drained chicken or frozen strips)

       Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
      When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.

      Grease muffin pan and fill with about a tablespoon of  Crust mixture, making a well in the muffin cup and working it up the sides to form a little cup to put the salsa into.
      After forming the cups add filling ingredients and bake at 350 degrees for about 20 minutes.
      Let cool about 3-5 minutes and gently work a spoon around the edges and underneath the taco bite gently lifting it out when you have worked it loose. Eat and enjoy with your favorite taco toppings or freeze for later
      Add dough to muffin pan

      add salsa or taco sauce

      add cheese


      bake

      let cool


      remove gently with a spoon

      Not Croissant Chicken Bake

       

       Crust 

      • 4eggs

      •  1/3 cup parmesan cheese
      •  3 cups mozerella cheese
      •  pinch of mineral salt
      •  1/4 cup coconut flour
      •  1/4 cup Almond flour
      •  1 tsp xanthan gum

       filling

      • 8 oz cream cheese
      • 1 1/2 - 2 cups chicken chopped or shredded
             ( leftover rotiseirre chicken would be good and economical)
      •  1/2 cup parmesan cheese 
      • 1 tblsp chopped onion
      •  1/2 tsp garlic powder
      •  1/2 tsp onion powder
      •  1/4 tsp turmeric
      •  1tsp parsley flakes
      •  1/2 tsp paprika 

       Microwave Mozzarella cheese  and coconut  oil in 30 second to 1 minute increments to soften it
      When soft and partially melted stir in Parmesan cheese , almond flour, coconut flour xanthan gum, and baking powder whisk in eggs or mix in mixer.
      Grease an 8x8 pan with coconut oil. And spread about 2/3 of the crust mixture out into the pan.
      Top with filling.
      Add remainder of the topping and spread or crumble ontop of filling.
      Bake at 350 degrees for about 25- 30 minutes until golen brown.
      Allow to cool 5- 7 minutes and cut into 9 serving slices.
      Enjoy !
      Leftovers freeze and reheat easily

      Fried Ice Cream

      Fried Ice Cream

      My blogging  friend at nanas little kitchen  has a similar  recipe check it out here 


      Ingredients

      • Low carb tortilla
      • Carb Smart Ice Cream
      • Sweet blend mixed with Cinnamon
      • coconut oil for frying


      Add a 1/2 serving of carbsmart ice cream to low carb tortilla



      fold over length wise an crosswise to form a square type shape

      Fry in tsp coconut oil in frying pan on both sides


      Mix sweet blend and cinnamon

      remove tortilla from pan and sprinkle in cinnamon mixture

      shake off excess cinnamon mixture

      top with a little carb smart or 1/2 serving

      Strawberry Lemonade cake or cake bites Low carb THMS

      Strawberry lemonade Cake or Bites






      One of my all time favorite recipes to make for my kids from our garden vegetables has been zucchini or yellow (or crook neck) squash bread

      I always sliced it really thin or grated it when they were outsie playing , so that they would not know my special ingredient.
      After getting caught with my special ingredient in hand I added chocolate chips to the recipe and I was quickly forgiven!

      Our old stand by version had white flour and white sugar . I have adapted that version  for an upcoming recipe of low carb Zuchini Bread. Keep your eyes peeled it is coming soon!

       Here is the my recipe adaptations from the trimtastic cake in the book which would be very similar to how I would convert my recipe.
      2 cups shredded yellow squash
      juice from one lemon
      2 teaspoons lemon extract

      Grease 8x8 cake pan or line mini muffin tin and bake 20-25 minutes.
      I added strawberry whip cream icing too the muffin bite tops and spread the icing onto the cake when cooled.

      Strawberry whip cream low carb THMS

      1cup Heavy whip cream
      3/4 cup fresh strawberries
      2 tbsp ground sweet blend (more if needed for your taste)
      1-2  tablespoons of cream cheese
      Add cream to Mixing Bowl using whisk beaters turn onto high until the cream reaches co*l whip like consistency.
      Turn the mixer to low and gradually add the sweetener and chopped strawberries.
      Remove from mixing bowl and put into food storage bowl or icing bag (if using your decorate) and refrigerate.
      It is ready to use.
      If using for icing or piping I would set it in the freezer for a few minutes to harden up a little, so it does not get to liquid while piping. (A few minutes is key here , you can not use it will not come out of the bag if it is frozen)

      chocolate fried taco turnover

      I changed up Briana's fried berry taco recipe here to suit my chocolate and cinnamon sugar craving.. All I can say is Thank you! an YUM!


      Cream cheese and sweet blend


      cinnamon and super sweet blend mixed together


      1/2 a mosser roth or lilys chocolate square


      Greek yogurt,cream cheese and sweet blend mixed and spooned onto chocolate


      low carb tortilla folded in half length and width into a square


      Fry In coconut oil


      Sprinkle with cinnamon sweet blend mixture
